Power to the Purple Maqui Ice Cream

No ice cream maker required for this purple­ powered dessert!

Ingredients:

1 Banana, peeled

2 Cups frozen Blueberries

1 14­ounce can Coconut Milk

2 Tbsp Navitas Naturals Coconut Water Powder

1 Tbsp Navitas Naturals Maqui Berry Powder

1⁄4 cup Maple Syrup

1 tsp Vanilla Extract

1 Tbsp Vodka (optional)

Directions:

Blend all the ingredients together. Pour the mixture into a 9 by 9­inch pan, and place in the freezer for 4­6 hours, or until frozen through. Let defrost for 5­-10 minutes before serving to soften.

Chef’s Notes

For the best texture, use full ­fat coconut milk, and not the light variety. 

Yield: 1 Quart
